Ingredients:
- 2 lbs beef chuck roast or short ribs
- 4 dried guajillo chilies
- 2 dried ancho chilies
- 1 chipotle pepper in adobo
- 1 white onion, chopped
- 4 garlic cloves, minced
- 1 tsp cumin
- 1 tsp dried oregano
- 1 bay leaf
- 1 cinnamon stick
- 4 cups beef broth
- 1 cup water
- Salt and pepper to taste
- Corn tortillas
- Chopped cilantro, for garnish
- Lime wedges, for serving
- Shredded mozzarella or Oaxaca cheese (optional)
Directions:
- Prepare the chilies: Remove seeds and stems from guajillo and ancho chilies. Toast them in a dry skillet over medium heat until fragrant, about 2 minutes. Transfer them to a bowl and cover with hot water for 10 minutes to soften.
- Make the sauce: In a blender, combine soaked chilies, chipotle pepper, onion, garlic, cumin, oregano, bay leaf, cinnamon stick, and 1 cup of beef broth. Blend until smooth.
- Cook the meat: Season the beef with salt and pepper. In a large pot, heat some oil and sear the beef on all sides until browned. Pour the chili sauce over the meat, then add the remaining beef broth and water. Bring to a simmer. Cover and cook on low heat for 2.5ā3 hours, or until the meat is tender and shreds easily.
- Shred the beef: Remove the meat from the pot, shred it, and return it to the broth to absorb more flavor.
- Make the tacos: Dip a corn tortilla into the birria broth, then place it in a hot skillet. Add shredded beef and cheese (optional) to one side, fold the tortilla, and cook until crispy and golden on both sides.
- Serve: Garnish with chopped cilantro, serve with lime wedges, and enjoy with a side of the flavorful birria broth for dipping!
